Creamy Dreamy Parfait

I got this tasty treat idea from Laura Child’s tea shop mystery novel called Scones & Bones.  Sounds like something cold and sweet to enjoy on a hot day.  Any dessert is welcome, no matter what time of year!

Creamy Dreamy Parfait

You will need:
-1 can (6 fl. oz.) frozen orange juice concentrate
-8 oz. vanilla yogurt
-1 cup milk
-1 Tbsp. granulated sugar
-1/2 tsp. vanilla extract
-3 ice cubes
-Orange slices and cookies for garnish

BLEND the orange juice concentrate, yogurt, milk, sugar, and vanilla in a blender on low speed until smooth and creamy.  Increase the speed to high and drop in the ice cubes, one at a time, keeping the top of the blender covered.  Blend until the ice is crushed.  Pour into parfait glasses and garnish with orange slices and your favorite cookie.

I like chocolate a lot (in case you didn’t know by now), so one of my suggestions would be to maybe add some melted chocolate fudge or syrup on the top for a little flair!
