Since it is New Year’s Eve, I thought it would be a good idea to give a recipe for parties and entertaining. If you are having a few people over tonight, this is usually a crowd-pleaser and considered a classic at most get-togethers. I got this one from Lisa Lillien’s book, Hungry Girl Happy Hour: 75 Recipes for Amazingly Fantastic Guilt-free Cocktails and Party Foods. Usually, everyone loves Nachos and have had them with salsa or sour cream. This recipe gives it a little bit more pizzazz, with some fat-free ingredients to help you with your New Year’s resolutions!
Saucy Chick BBQ Nachos
You will need:
-4 ounces (about 70) baked tortilla chips
-One 9.75-ounce (or 10-ounce) can 98% fat-free chunk white chicken breast in water, drained and flaked
-1/2 cup barbecue sauce, divided
-1 cup shredded fat-free cheddar cheese
-2 tablespoons chopped scallions
-Optional topping: fat-free sour cream
Preheat oven to 350 degrees. Spread out tortilla chips on a large ovenproof platter or baking sheet sprayed with nonstick spray. Set aside.
In a small bowl, combine chicken and 1/4 cup barbecue sauce. Mix well, and then spoon mixture evenly over the chips.
Top evenly with cheese. Drizzle remaining 1/4 cup barbecue sauce over the chips.
Bake in the oven for 8 to 10 minutes, until cheese and barbecue sauce are hot.
Sprinkle scallions over nachos. If you like, top or serve with sour cream. Enjoy!!!
Makes 5 servings
Keep in mind that if you are having many people, you will obviously need more chips and chicken. Also, the suggestion of fat-free items can be replaced by regular products. Please remember to enjoy yourself responsibly over the holidays! Happy 2013 🙂
